Curried Egg Salad With Arugula And Pistachios

If you don't already read/subscribe to Serious Eats, you are dumb. If you check it out now/sign up, I will forgive you. Serious Eats is an awesome foodie site that features recipes, restaurant reviews, tips & tricks, quizzes, and videos. You can sign up for newsletters or just check out the site directly. One of the columns, Dinner Tonight, features quick & easy recipes five nights a week. Last Friday's recipe was for Curried Egg Salad With Arugula And Pistachios. At first I was like, "UM that is SICK." But then I remembered how much I love eggs, arugula, and pistachios. Curry could be loved too, I guess.


The recipe sounded simple enough for me to whip after the gym - I like that. Here's my version with healthier modifications. 


What you need:

  • 2 hard-boiled eggs, chopped
  • 4 hard-boiled egg whites, chopped
  • 1/4 cup Greek yogurt, 0%
  • 1/2 teaspoon curry powder
  • 2 tablespoons chopped pistachios
  • 2 cups baby arugula
  • salt & pepper
Mix together eggs, whites, Greek yogurt, curry powder, and pistachios. Salt and pepper to taste. Lay over a bed of arugula. Feast! Serves 2. 

Or, if you'd like to make this a sandwich, stuff a bread thin or pita:
Yum! Don't be intimidated by the curry - it adds a twist to your typical egg salad and with all the flavor, you won't miss the mayo. At first I was surprised that the recipe calls for salt, as it was already an ingredient in my curry powder. You could leave it out, but I think it needs just a dash. The peppery arugula adds a nice bite along with a boost of Vitamin A, C, Calcium, and Iron. If arugula is too flavorful for you, add spinach to your mix.

While I was taking pics, my roommate started cooking his dinner. Boding is a very clean eater - he eats more vegetables than anyone I know. I can't tell you how many times I've seen him eat chicken + broccoli + rice for dinner. Tonight he was out of rice. What did he have for his carb?

Honestly, I just read a lot. From paid subscriptions, free magazines at grocery stores, flyers at the gym, to endless websites, I will read anything and everything health-related. I have no education in health other than what I read on my own time and from my own experiences. I am very passionate about food - for both enjoyment and nourishment.

  1. I LOOOVE egg salad! Seriously, it's one of my favorite foods. Until I a few years ago I was ashamed to admit it...I had bad memories about kids turning up their noses at my egg salad sandwiches in elementary school. Haha.

    This recipe looks fantastic! I would never have thought to add pistachios to the mix. Yum!

    I <3 your roommate simply because he loves Funfetti cupcakes. Probably the best cake mix ever invented!

  7. I really wish I could get myself to eat egg salad but I just cant. Something about cold eggs just doesn't do it for me. I bet this would be a great chicken salad.

    I haven't eaten egg salad in, geez, I couldn't even tell you how long! I like the idea of adding curry spices to it though!

  10. I've never heard of Serious Eats but I will definitely check it out. I LOVE Fit Sugar and Yum Sugar.

    I used to buy a ton of food/fitness magazines, but now I just go on websites instead. It's a huge time waster. :P

    Curry is something I was so freaked to try but it turned out to be amazing.

    I find a lot of good recipes from Weight Watchers oddly enough.

  15. Please forgive me, I didn't know about Serious Eats until now! I can TOTALLY get down with easy/healthy/yummy recipes. I'm ATTEMPTING to cook more...we'll see how THAT goes! And ohmygosh, your roomie sounds so healthy! I wish my bf could get on a veggie kick.

  18. Zucchini, Squash and Black Bean Quesadilla:

    2 whole wheat torts
    Chopped Zucchini
    Chopped Squash
    about 1/2 cup black beans
    Cheese ( I used laughing cow cheese or goat cheese)
    Heat up on a pan or grill until cheese is melted. Use greek yogurt and salsa for a side.

  19. 1 cup of vanilla sugar free pudding.
    2 tbsp of canned pumpkin

    stir

    add a dash of nutmeg and cinnamon to your liking...and enjoy!

  28. I love curry in just about anything so this sounds really good.

    I get asked the same thing about how I know so much about nutrition and what not..of course it's my major, but other than that there are tons and tons of good sites out there. I follow a lot of the ones you mentioned. If it's something you love, you'll spend you free time "researching" it. :P

  30. That sounds so delish! I am a big fan of curry. I could pretty much eat curried anything. And, by the way, I am so jealous that you have such an awesome roomie. Aren't guy roommates the best? Best two roomies I've ever had for sure.
