In real life news, I have a confession. I will not be completing one of my December goals. Going vegetarian for a week just isn’t going to fly this month. With the Holidays, family in town, and dates, it’s only going to cramp my style. And my style is chicken.
With that said, I would like to try several vegetarian recipes so that when I do complete this goal, I don’t have an overwhelming “omg, what the truck am I going to eat” feeling for seven days. I will instead have a handful of recipes/not die. My roommate thinks the aforementioned reasons are merely “excuses” but I’m just not mentally prepared to give up Chick-fil-a for a week either.
Vegetarian Recipe #1 – Black Bean and Corn Quesadilla
- black beans
- corn
- your favorite cheese
- some greens
- some seasoning (I used Goya Sazon with coriander & annatto)
- whole wheat tortilla
- some salsa
Want to know what else is meat-free and delicious? MENCHIE’S! Seriously, I cannot stop. Amanda and I talk about Menchie’s more than clothes and boys. Last night while Callie was here, I insisted that we go to try two of their new flavors: Peppermint and Cake batter.Per usual, I topped it with an unnecessary amount of Oreo crumbles, heath bar bits, cookie dough balls, and sprinkles. My froyo to candy ratio is typically 50:50. What’s your froyo ratio?

I like my ice cream to be drowning in sprinkles- a 50/50 ratio. And I usually end up finishing the sprinkles before the ice cream anyway and throwing the last few bites of ice cream out. I LIVE for sprinkles.

ReplyDeleteIt's impossible for me to go veggie during the holidays and all b.c of one restaurant back home in FL. They have the best ribs ever and I refuse to miss out on them.

ReplyDeleteI don't know about a week of vegetarian, but a day could be done for sure. I do think vegetarian meals are a LOT easier to make than cooking a meat based protein, so it may not be all that bad. I just worry about getting bored with eating the same old thing also.
