Ch Ch Ch Chili

Just like last Wednesday, I went to Auntie Kelly's for dinner. She had picked out a chili recipe from the "Apron's Simple Meal Recipes" from Publix. The recipe only contains ten ingredients and seemed perfect for the cooler weather we've been having. I know that in some parts of the country it has been snowing, and I feel bad saying it's been chilly here, but 60 degree days are not my cup of tea.

Ground Beef Chili
Ingredients:
  • 1 onion, coarsely chopped, divided in half
  • 1 1/2 lb lean ground chuck beef
  • 3 tbsp chili powder
  • 1/2 tsp seasoned salt
  • 1/2 tsp pepper
  • 1 (10.75-oz) can condensed tomato soup
  • 1 (14.5-oz) can diced tomatoes/sweet onions (undrained)
  • 1 (10-oz) can milder diced tomatoes/green chiles (undrained)
  • 1 (16-oz) can chili beans in mild sauce (undrained)
  • 1 (15-oz) can black beans (drained)

Preparation:
  • Preheat large saucepan on medium-high 2–3 minutes. Place beef, chili powder, seasoned salt, pepper, and one-half of the onions in pan; cook 4–5 minutes, stirring to crumble meat, or until meat is brown and no pink remains.
  • Stir in remaining ingredients, including remaining one-half onions. Bring to a boil, stirring often.
  • Reduce heat to low; cook and stir 10 more minutes to blend flavors. Serve.

Gabby told Kelly that she wanted to cook this recipe all by herself for me - so sweet! She needed help cutting the onion and sauteing the meat, so we ended up just cooking it all together.
While the chili simmered, the three of us took random pictures of each other. Look at these future bloggers! Remember when I visited family in Massachusetts back in July? My cousins Braden and Nolan were future bloggers too!!
Gabby is very into her new camera and I have a feeling she's going to be a very serious photographer :) 
Once the chili was done, we set up our toppings: cheddar cheese, low fat sour cream, Wholly guacamole, and tortilla chips.
Standing on a chair to get a good angle was definitely necessary. (PS - I want to wear tunics and leggings every single day.)

The chili had lots of flavor and was a good source of protein, iron, and fiber.

And check out Zachary - he stuck his spoon right into the bowl of cheese and ate it right up. He was so over leftover spaghetti.

In other news...
Has anyone noticed how much awesome music is out right now? And now that Lil Wayne is out of jail, the music industry can only improve! I'm currently in love with so many songs, and feel the need to share my newest playlist. (Click song title for youtube video.)
Anything you would add to this list? Amanda and I are running in the 3rd Annual Pajama 5k on Saturday morning and I'd love some more music ideas! Also, at the after party prizes will be given for the best pajama outfit. Do you have any ideas on what we could wear, other than your typical pajamas? Ideas are appreciated!

  3. YUM! Chili is one of my favorite things about cold weather. I hope I never tire of it!

    Have you heard any of Kanye's new stuff? He pretty much rocks! Monster with Nicki Minaj is SO awesome, especially to run to! When I'm running, no matter who is around me, I always at least mouth her phrase "I'm a motha ___ing monsta!"

    And, of course, you know my obsession with Weezy! :)

  8. I love the deliciousness of a simple chili- mm! And topping are the best part.
    Also, I'm 100% with you in wearing leggings and tunics and boot every single day.
    Where is your favorite place to shop to find these things? My wardrobe needs some spicing up!

  10. THIS IS VERY IMPORTANT: Where did you get your boots??? I've been looking high and low for boots that are at least similar.

    And, um, Zachary...Yeah, he might just be the cutest little boy, ut something about the pictures makes me think that perhaps he might just be a handful...An ADORABLE handful!

    Also, the Nicki Minaj album is out on November 22. Have you heard Massive Attack? Check it out on iTunes...It gets me through a tough workout.

  19. Some friends back in high school dressed up like big babies once with adult size onseies. Not sure where they found them. They wore pigtails for the hair and had bibs, bottles and giant pacifiers as accessories. Or you could go the opposite route and be a granny wearing a muumuu/duster with a scarf or rollers on your head.

  21. Girl, this chili looks yuuuuum-E! I miss chili so much. My mama puts beer in it and it's so good (even though I cannot STAND beer to drink, however it tastes good in chili!)

  23. I am slightly obsessed with the song No Speak Americano by Yolando Be Cool. It might not be running music per se, but it definitely gets the booty shakin on the dance floor.

    The chili looks amazing. Nothing beats old fashioned ground beef version. Yum!

  25. Boots and leggings are staples in my fall wardrobe!

    Mmm chili is so good. I've never really topped it with anything though. I feel like guac and cheese would take it to an entirely new level of deliciousness.

    As for the race, I say you rock a onesie with a bum flap. ;)

  27. One, I must comment on the music right now! I can't agree more! I can NOT stand Katy Perry for some reason and am just enjoying all the move to music right now ;). BOOTS...you never answered me before - where from?

    Also, I LIVE in leggins, like weirdly. I come home from work and scurry to put those suckers on. I swear my bf is going to hide them from me just to see if I have anything in my closet left! xoxoxoxo

  29. i agree w/ tunics and leggings, but i only own one cute tunic (francesca's, black/green, you will remember), so prepare yourself to be online shopping with me for more the next time we're not busy at work.
