The Friday Five 10.5.12

1. What I’m Reading: Wild About Greens: 125 Delectable Vegan Recipes for Kale, Collards, Arugula, Bok Choy, and other Leafy Veggies Everyone loves.

Ok, that has to the be the longest book title ever. This cookbook is broken up into 5 chapters: Basic Preparations for Leafy Greens; Greens with Beans, Grains, Pasta & Other Vegetables; Salads, Dressings & Dips; Greens in Soups & Stews; and Green Juices & Smoothies. There are a ton of good recipes but unfortunately very few pictures. This is sad because I’m sure they’d all photograph beautifully.

2. What I’m Eating:  Lately I cannot get enough of Publix’s reduced fat mozzarella string cheese. I feel like a 5 year old when I eat it, but it’s an easy, somewhat healthy snack. Each stick has 70 calories, 4 grams of fat and 8 grams of protein. Are you a peeler or a biter? I’m most definitely a biter. I take aggression out on my string cheese. photo (18)

The Friday Five 9.7.12

1. What I’m Reading: After reading  The Weight of Silence and These Things Hidden, both by Heather Gudenkauf, it was only natural that I read her newest book, One Breath Away.

From Amazon: In her most emotionally charged novel to date, New York Times bestselling author Heather Gudenkauf explores the unspoken events that shape a community, the ties between parents and their children and how the fragile normalcy of our everyday life is so easily shattered.In the midst of a sudden spring snowstorm, an unknown man armed with a gun walks into an elementary school classroom. Outside the school, the town of Broken Branch watches and waits.

It was good, but The Weight of Silence was by far the best of her three. I’ve told so many people to read it. Check it out! Last night I started Backseat Saints by Joshilyn Jackson.

2. What I’m Eating: Sriracha. Chipotle Cheddar pretzel crisps. Habanero-infused St. Germain with lime @ The Macintosh. The spicy kick hasn’t ended. At Publix last week, I picked up some Boar’s Head lunch meat.

I was in line ordering the Chipotle chicken breast when the woman next to me asked if I had tried their Blazing Buffalo flavor. She told me I’d never go back to anything else. She might be right.  My lips do not stop tingling these days. Cheapest lip plumper ever.

3. What I’m Listening to:  I am not one bit ashamed that I have had Justin Bieber’s “As Long As You Love Me” on repeat for the past week. Yesterday before Amanda and I started our run, she asked what we should listen to. Bieber radio, duh. We ran our 5k to the sweet sounds of Biebs. Sick, right?! The next morning, Nancy left me a voicemail asking if something was wrong with her because she is 28 years old and obsessed with an 18 year old. I laughed, shook my head, and turned this song on.

For the record, no, I am not attracted to Biebs…just his music.

The Night We May Have Overdosed on Sriracha

Sriracha is a funny, inexplicable obsession. It burns as you eat it, but you keep adding more, hoping for a taste of the slight hint of sweetness. As you add more to your food, your eyes well up, your nose starts twitching, and sometimes, you just cry. But it’s a joyful cry, I promise you that.

Amanda and I took adding Sriracha on our food to a whole new level last week when we made an entire meal centered around it. It burned so good. I found all three of these recipes on pinterest, but, as always, altered them to our personal nutritional standards and likings.image

Sriracha Panko Encrusted Chicken Tenders

Ingredients:

  • 1 lb. chicken tenderloins
  • 1/3 cup Sriracha
  • 1 tbsp. white balsamic vinegar
  • 1 inch peeled and grated ginger
  • 1 clove of garlic, minced
  • 2 large egg whites
  • 1.5 cups panko crumbs

Preparation:

  1. In a large ziploc bag,  combine the Sriracha, rice vinegar, minced garlic and grated ginger. Place chicken tenderloins in bag and shake to saturate. Let marinade in the refrigerator for at least 1 hour.
  2. Preheat oven to 425*. Set up a dredging station with bowls. Fill the first with egg whites and the second with panko crumbs. Taking one chicken strip from the marinade at a time, dip in egg white, then roll into panko crumbs until coated.Place the breaded strip on a clean plate and continue with the rest of the chicken.
  3. Once all of the strips are breaded, place them on a baking sheet lined with foil and bake for 15 minutes at 400 degrees. After 15 minutes, turn the oven on to broil and broil for about 5 minutes until golden brown.

Baked Sweet Potato Fries with Sriracha Dipping Sauce

Ingredients:

  • 2 large sweet potatoes, cut into strips
  • 1 tsp. ground cumin
  • 1 tsp. chili powder
  • 1 tsp. salt
  • 1 tsp. fresh ground black pepper
  • 1 (5.3 oz.) container plain, fat-free Greek yogurt
  • 1 garlic clove, minced
  • 1 tbsp. freshly squeezed lime juice
  • 2 tsp. Sriracha
  • salt & pepper to taste

Preparation:

  1. Preheat oven to 425 degrees. Place sweet potatoes in a single layer on a baking sheet. Combine cumin, chili powder, salt and pepper in a small bowl. Toss spice mixture on potatoes. Bake for 10 minutes. Turn potatoes with a spatula and bake an additional 10 minutes.
  2. While potatoes are cooking, make dipping sauce. Whisk together Greek yogurt, garlic, lime juice, and Sriracha in a small bowl. Add salt and pepper to taste.
  3. Remove potatoes from oven and serve with Sriracha dipping sauce.

Brussels Sprouts with Sriracha, Honey, and Lime

Ingredients:

  • 1 lb. Brussels sprouts
  • 2 tbsp. olive oil
  • 1 tbsp. Sriracha
  • 3 tbsp. honey
  • 2 tbsp. lime juice
  • salt & pepper, to taste

Preparation:

  1. Cut each Brussels sprout in half. Heat olive oil in a large skillet over medium-high heat. Pan fry until golden brown.
  2. Meanwhile, in a small bowl, whisk together Sriracha, honey, and lime juice. Remove Brussels sprouts and add to a bowl. Toss with Sriracha mixture.

This dinner was awesome. Despite having Sriracha in all of it, it wasn’t as spicy as we expected. Our favorite part was definitely the dipping sauce – we put it on everything. I’ll definitely make it again to use on other vegetables or fish.

I’m proud to say that after having my first bottle of Sriracha for only a week, it’s half gone. Crazy, right?

Black Bean Company–Mt. Pleasant location

Late July, Black Bean Company opened a third location in Mt. Pleasant. Though the restaurant is right up my alley, I’d only been to the James Island location once because it’s a bit far. When I heard the news about their location in the new MUSC East Cooper building, I was excited to give it a second try. Black Bean specializes in fresh wraps and salads and has many vegetarian and vegan options.

Last Friday, Amanda texted me saying she had just picked up a wrap. I knew there was no way I couldn’t go after hearing her tell me how great her Black & Blue wrap was. So an hour later, there I was inside MUSC, thankfully only for a wrap and not hospitalization.

I debated between several options, but ultimately chose the Southwest Chicken wrap – Roasted chicken, black beans and Jasmine rice, fresh local sweet corn, roasted tomatoes, southwest chipotle sauce, shredded carrots, parmesan cheese, mixed greens.

This was one of their pricier wraps, at $9.95; that’s a bit steep for my taste. The wrap itself was fresh and flavorful. The Greek yogurt and granola that I chose as a side (other options include potato or macaroni salad) was incredibly thick and creamy. Addictive. My only qualm was that they skimped on the corn and tomatoes. There were only a few kernels of corn and TWO tomato chunks. Odd. The spicy dressing had a nice kick to it.

Over the weekend, I was wishing Black Bean was open, but this particular location is only open Monday-Friday, 8 to 5 pm. Luckily I work from home on Mondays, so, you guessed it…I went back on Monday.

This time around I ordered The International – turkey, hummus, guacamole, artichoke hearts, pico de gallo, goat cheese, Spicy Goddess sauce, mixed greens.

I really liked this wrap as well, but it had the same issue with lack of ingredients. There was ONE artichoke and ONE chunk of guac in the entire wrap. Sad! They were pretty liberal with the cheese though, and I didn’t mind that.

Last year when I attended the Best of Charleston party, I was given a coupon for a free order of Vegan spring rolls, so I redeemed that.

The spring rolls are simply purple cabbage, carrots, and greens in a soy wrap served with a spicy sauce. They’re good, but kind of boring. Had it not been for the sauce, I wouldn’t have really cared for them.

Overall, I’m happy with Black Bean and will continue to try new wraps. I just wish they wouldn’t be so conservative with the fillings! If a menu says something is in a wrap, it should be in there, and not just a small amount. I read reviews on Urbanspoon, and a lot of people commented saying they had issues with missing ingredients too. Hopefully they’ll work on that!Black Bean Co. on Urbanspoon

Family Dinner Night at Crave

Before Grammy went back home to Massachusetts, we had dinner at Crave Kitchen & Cocktails. It’s always sad to see her go, but good food always lightens the mood! As my aunt and uncle hadn’t been to Crave before, I immediately suggested it for the evening.

What I love most about Crave is that their menu appeals to everyone. They take typical dinner entrees, amp them up with flavor and creativity, and voila! A menu that is sure to satisfy any type of eater. They also cater to those with special diets needs; they offer gluten-free, paleo, and Crossfit diet options. Should you be vegetarian or vegan, Chef Ganstrom is happy to serve something that is right for you. That said, no one of my family has any dietary restrictions, so we ordered straight off the regular menu.

Typically a man who enjoys his steak, my Uncle Johnny opted for the Chicken Marsala - Pan seared chicken breasts with wild forest mushrooms in a Marsala wine sauce, served over a bed of fettuccini. I think he mainly chose this entrée to see how it compared to what he creates at home. Luckily, he liked it just as much! Even Grammy who cooked for an Italian man for years said it rivaled hers.DSC00329

Grammy was very pleased with her Filet Mignon – 8 oz center cut prime filet grilled, served with a potato croquette and grilled asparagus, accompanied with a mushroom and onion demi glaze. The filet was juicy and tender, the asparagus was crisp, and the croquettes were piping hot pillows of rice. DSC00326

Gabrielle, my 11 year old cousin, excitedly ordered off the adult menu: Northern Italian Beef & Pork Bolognaise – House Ground Beef Tenderloin and Pork, stewed with tomatoes, served on a bed of Fettuccine. We all agreed this was one of our favorite dishes. Along with the herbed flavor in the meat, there was a touch of sweetness. I wish I knew the secret ingredient!DSC00327

Kelly and I opted for seafood, but don’t we always? It’s hard to say no to deliveries right from the Charleston waters. She went with the Sea Scallops – large sea scallops seared until golden brown, then served on top of a bed of rich lobster risotto and garlic pan fried green beans. You know, cooking scallops isn’t easy. One minute too long and you’ve got yourself a chewy mess. These were cooked perfectly and the risotto they were placed upon was creamy with chunks of lobster.DSC00328

I often tell Carmela, the sweet waitress who I always request, to tell Landen to “just make something delicious” or whatever it is that my body is craving. I am never disappointed. That evening I had a macadamia nut and coconut crusted filet of sea bass served atop asparagus, spinach, and sliced beets. Ahhhhh-mazing.DSC00325

When I said my family didn’t have any dietary restrictions, I wasn’t kidding. Chocolate is something that is never restricted from the table. I mean, why would we punish ourselves like that? ;) We ordered three desserts to share. My little cousin Zachary wanted the Baked Alaska – Mint chocolate chip ice cream, topped with flaming meringue, served over chocolate cake and fresh fruit with mojito syrup. The dessert actually comes out on fire. Zach got a kick out of that, but as soon as the flame disappeared, his fork was ready. This, so far, has been my favorite dessert at crave. You just can’t go wrong with the mint and chocolate combination. DSC00331

Grammy, the chocolate-obsessed member of our family requested Double fudge cake – Double layered French chocolate fudge cake with macaron almonds, topped with chocolate ganache and an almond twill cookie. This was very rich and definitely reminded me that I need to get some cavities filled. Worth it.DSC00333

Some wise person at the table (I actually think it was Johnny) ordered a fruit-based dessert: Baked Apple Crisp – Chef’s special oatmeal maple crisp topping, baked with North Carolina cinnamon apples served with vanilla bean ice cream and cinnamon reduction. I love this dessert, but I recommend it more in the fall when the weather is cooler. It gives you those warm, fuzzy feelings you have around Thanksgiving and Christmas. Or Hanukkah. Or Kwanzaa. Or any Winter day really, let’s be honest.DSC00334

I was happy that everyone was so pleased with their meals. The other night when Kelly and I were chatting she told me, “Johnny and I have been craving Crave. Pun intended.” I think we’ll be back next week!

CSA Week 9 / Fun With Melons…and Salsa!

You know the drill. Gruber Farm CSA time!! As each week goes by, I become more and more obsessed with having a weekly box of produce. The convenience. The variety. The freshness. Need I say more?DSC_0362 (1024x683)

Week 9 contents:

Xtina’s Sweet & Spicy Salsa

Ingredients:

  • 3 medium tomatoes, chopped
  • 1/2 medium onion, chopped
  • 2 small jalapeno peppers, diced
  • 1/4 cup cilantro, chopped
  • 1 tbsp. honey (secret ingredient!)
  • 1 tsp. salt
  • juice of 1 lime

Preparation:

Place all ingredients in food processor or blender. Pulse until desired consistency is reached.

When I finished making the salsa, I had my roommate do a blind test with my salsa versus Publix’s salsa. She preferred mine! I was so excited. I felt like a younger, prettier, less pretentious Martha Stewart.

After our silliness with the watermelon and salsa, we made a seriously simple dinner:DSC_0384 (1024x683)

Cumin-roasted chicken topped with salsa and sliced avocado, corn on the cob, and Trader Joe's spicy soy & flaxseed tortilla chips.

These chips have 6 grams of protein, 4 grams of fiber, and 500 mg of omega 3’s per serving. They’re definitely a better alternative – no perservatives either!

Weekend Highlights

Aziz!!! Oh  my gosh, he was funny. My face still hurts from smiling so much.

Sunday’s weather was glorious. There was absolutely no reason to stay indoors. Well, except for brunch. Rewind to Saturday night. After the Aziz show, Boding and I went to The Macintosh  for drinks. I go in there pretty regularly and last night got to hang out with Jacob, one of the chefs. It was really cool to talk to someone who is so passionate about food, being a chef, and the Indigo Road restaurant group. We were quickly convinced to come back the next day for brunch, but I told him I would be ordering “the healthiest thing he could come up with.”

The bartender was a little puzzled by me requesting “the healthiest thing he can come up with” but Jacob did an excellent job of coming up with just that. I had an incredibly delicious plate of  butternut squash, brussels sprouts, onions, mushrooms, micro greens, and quinoa with a parsnip puree. Ahhhhh, everything needs to be dipped in this puree. My beverage of choice at The Macintosh is something one of the bartenders came up with for me a while back. He named it The Xtina: Corazon tequila, ghost pepper-infused St. Germain, lime juice, and agave. It’s like a spicy margarita.DSC00095

Boding had the Chicken and Waffles. At first I was skeptical of waffles that aren’t served with maple syrup but then I tried a bite. They do not need a single drop of anything. They are perfect, as was the chicken.DSC00092

Jacob later sent out a gift to be funny. Fried dough. Quite comical after my healthy veggie plate. He’s got jokes.DSC00096
