The Birth of Mactina

Congratulations are in order! Over the weekend, I made a serious purchase.

At 13.3” and 4.5 pounds, meet my child, Mactina!DSC_0695

I actually attacked King Street with my debit card on Saturday. photo 1 (1)

Boding was nice enough to carry the child as my bags started building up.image

My motherly instincts should have kicked in by now, right? They have not. I can barely work this thing! I might need to hit up the Genius Bar for some lessons with the senior citizens.

All jokes aside, I’m curious to know what you bloggers use for writing your posts. I currently write with Windows LiveWriter and publish through Blogger. I know, I should have made the switch to WordPress long ago, but that’s another issue. I may continue using my PC to write posts until I figure this out.

Mac users: How long did it take you to get used to your Mac? What are some must-have apps I need?

Bloggers: What the heck do I use to write my posts? I refuse to write in the blogger platform – ick!

I also want this bracelet. It’s only $8,250.xring

2. After a long run a couple weeks ago, Amanda and I refueled with two of the best sandwiches at Purée: The Deep South Sandwich, which is very similar to a Chick-fil-A sandwich, but made with seitan, photo 2 (1)

and a Blackened Jalapeno Burger, made with tempeh.photo 3 (7)

If you’re thinking about bringing a man friend to Purée, convince him to try one of these and he’ll forget he’s not eating meat.

3. Yesterday I was using too many abbrevs (abbreviations) and my coworker said I sounded like Tom Haverford. I took that as a compliment.photo 1 (1)

4. Years ago, I loved these Grapples.photo 5

Now they have Crazy Apples . Have you tried either?photo 1 (7)

5. I took more than advantage of Old Navy’s sale on active wear. I bought a couple pairs of these compression pants that suck all your fat in:pants1pants2

Amanda and I both have the pink jacket and will be crossing the half marathon finish line wearing them. Nerd alert.

6. And why do I work out so much?

Sweet Potatoes with Collard Greens and Tomatoes

A good friend makes you laugh. A good friend is someone you can trust. A good friend has a shoulder for you to always lean on.

And a great friend brings you unexpected bowls of frozen yogurt just because there’s a new flavor at your favorite spot.

Hey, Danielle – that’s you! Yesterday evening, I got a text from Danielle telling me that Tutti Frutti had pumpkin frozen yogurt and asking if I wanted some. Obviously my response was prefaced with an “Omg” and finished off with a “Yessssss.” Seriously, how would you have responded?

Her delivery came on the perfect day; I was making an all veggie meal that should only be balanced out with something sweet, right? Just say yes. I was determined to use a bunch of items from my 5th CSA box.DSC_0387 (1024x732)

In this week’s box:

  • watermelon
  • red potatoes
  • apples
  • collard greens
  • squash
  • green peppers
  • onions
  • tomatoes
  • green beans

As much as I talk about eating candy, cookies, and dessert, I really do have great self control. I eat it often, but never eat a lot at a time. I took a huge bite of the pumpkin froyo, declared it  amazing, and put the rest in the freezer for after dinner. I swear this motivated me to a)cook a healthy dinner and b)grocery shop at the speed of light for the other items I needed.DSC_0391 (1024x731)

Sweet Potatoes with Collard Greens and Tomatoes

Ingredients:

  • 4 medium-sized sweet potatoes, peeled and diced into 1/2" pieces
  • 1 large onion, chopped
  • 3 cloves garlic, chopped
  • 1 bunch collard greens (about 6-8) leaves
  • 2 large tomatoes, chopped (about 2 1/2 cups)
  • 1 tbsp. olive oil
  • 1 tsp. garam masala
  • salt and pepper

Preparation:

  1. Wash the collard greens and pat try.  Cut down the center of each leaf to remove the rib.  Chop leaves into 1/4" strips and set aside.
  2. In a large nonstick skillet, warm the oil over medium heat. Add the potatoes and season well with salt and pepper.  Cook until they are browned and almost cooked through, about 5 minutes.  Place the cooked potatoes in a bowl and set aside.
  3. Add a little more oil to the pan and add the onion and garlic.  Cook for a few minutes until tender.
  4. Add the chard and sauté until it starts to wilt, about 2 minutes.  Add the potatoes and tomatoes into the skillet with the greens. Add the garam masala and stir. Taste and add more salt and pepper, if needed.  Continue to cook for a few minutes, stirring often, to let the flavors meld. Remove from heat and serve immediately.

Hello, colors! You’re going to love this dish, I promise. And boys, if you need meat in your meal, serve this as a side next to your steak or something. It’ll make anyone happy. And when you’ve finished gobbling it all up, you can comfortably reach for that cup of frozen yogurt.

Did someone just shout “Balance!”?

Amen.

Family Dinner Night at Crave

Before Grammy went back home to Massachusetts, we had dinner at Crave Kitchen & Cocktails. It’s always sad to see her go, but good food always lightens the mood! As my aunt and uncle hadn’t been to Crave before, I immediately suggested it for the evening.

What I love most about Crave is that their menu appeals to everyone. They take typical dinner entrees, amp them up with flavor and creativity, and voila! A menu that is sure to satisfy any type of eater. They also cater to those with special diets needs; they offer gluten-free, paleo, and Crossfit diet options. Should you be vegetarian or vegan, Chef Ganstrom is happy to serve something that is right for you. That said, no one of my family has any dietary restrictions, so we ordered straight off the regular menu.

Typically a man who enjoys his steak, my Uncle Johnny opted for the Chicken Marsala - Pan seared chicken breasts with wild forest mushrooms in a Marsala wine sauce, served over a bed of fettuccini. I think he mainly chose this entrée to see how it compared to what he creates at home. Luckily, he liked it just as much! Even Grammy who cooked for an Italian man for years said it rivaled hers.DSC00329

Grammy was very pleased with her Filet Mignon – 8 oz center cut prime filet grilled, served with a potato croquette and grilled asparagus, accompanied with a mushroom and onion demi glaze. The filet was juicy and tender, the asparagus was crisp, and the croquettes were piping hot pillows of rice. DSC00326

Gabrielle, my 11 year old cousin, excitedly ordered off the adult menu: Northern Italian Beef & Pork Bolognaise – House Ground Beef Tenderloin and Pork, stewed with tomatoes, served on a bed of Fettuccine. We all agreed this was one of our favorite dishes. Along with the herbed flavor in the meat, there was a touch of sweetness. I wish I knew the secret ingredient!DSC00327

Kelly and I opted for seafood, but don’t we always? It’s hard to say no to deliveries right from the Charleston waters. She went with the Sea Scallops – large sea scallops seared until golden brown, then served on top of a bed of rich lobster risotto and garlic pan fried green beans. You know, cooking scallops isn’t easy. One minute too long and you’ve got yourself a chewy mess. These were cooked perfectly and the risotto they were placed upon was creamy with chunks of lobster.DSC00328

I often tell Carmela, the sweet waitress who I always request, to tell Landen to “just make something delicious” or whatever it is that my body is craving. I am never disappointed. That evening I had a macadamia nut and coconut crusted filet of sea bass served atop asparagus, spinach, and sliced beets. Ahhhhh-mazing.DSC00325

When I said my family didn’t have any dietary restrictions, I wasn’t kidding. Chocolate is something that is never restricted from the table. I mean, why would we punish ourselves like that? ;) We ordered three desserts to share. My little cousin Zachary wanted the Baked Alaska – Mint chocolate chip ice cream, topped with flaming meringue, served over chocolate cake and fresh fruit with mojito syrup. The dessert actually comes out on fire. Zach got a kick out of that, but as soon as the flame disappeared, his fork was ready. This, so far, has been my favorite dessert at crave. You just can’t go wrong with the mint and chocolate combination. DSC00331

Grammy, the chocolate-obsessed member of our family requested Double fudge cake – Double layered French chocolate fudge cake with macaron almonds, topped with chocolate ganache and an almond twill cookie. This was very rich and definitely reminded me that I need to get some cavities filled. Worth it.DSC00333

Some wise person at the table (I actually think it was Johnny) ordered a fruit-based dessert: Baked Apple Crisp – Chef’s special oatmeal maple crisp topping, baked with North Carolina cinnamon apples served with vanilla bean ice cream and cinnamon reduction. I love this dessert, but I recommend it more in the fall when the weather is cooler. It gives you those warm, fuzzy feelings you have around Thanksgiving and Christmas. Or Hanukkah. Or Kwanzaa. Or any Winter day really, let’s be honest.DSC00334

I was happy that everyone was so pleased with their meals. The other night when Kelly and I were chatting she told me, “Johnny and I have been craving Crave. Pun intended.” I think we’ll be back next week!

Do you have a special dietary need or restriction?

What do you typically order for dinner? I almost always choose a seafood entrée and rarely order pasta.

New Favorite Foods

I love updating you guys on new foods that I’ve scouted out or become a fan of.

I ended a sentence in a preposition. Sorry! It would have sounded awkward otherwise, and though I usually epitomize the word awkward, I try to keep my writing a little less, um, weird. Onto the food!

1. Blue Diamond Salt ‘N Vinegar almonds.

Not only will these satisfy your salty craving, you get a dose of protein and fiber. They’re very delicious without being a sodium overload.

2. Publix all natural salsas. Publix Deli Salsa

Rachel and I picked up a tub of the medium salsa on Saturday. It’s really good! The ingredient list is clean, it’s got a great flavor, and isn’t too chunky. Chunky salsa is nasty.

3. La Croix Peach-Pear sparkling water.

They now sell this canned at Target! It’s definitely  my new favorite La Croix flavor. On another note, I’m still not over how awful the Coconut flavor was. Blech.

Let me tell you a secret: Sometimes if I don’t like a bottle of wine, I add a bit of sparkling water to it. Then bam! I’ve got a tastier, more refreshing glass of happiness.

4. Fiber One 90 Calorie Chocolate Chip Cookies

They’re soft, pack 5 grams of fiber, and contain only 8 grams of sugar. It’s a treat! I highly suggest nuking one in the microwave for about 15 seconds. Mmm!

5. Tropicana Trop50 Raspberry with Green Tea. IMAG2599

Amanda and I used this to mix with our vodka on the boat the other day. It’s only 50 calories per 8 ounces – a great mixer for a lower calorie beverage. Oh, and say hello to Svedka, my favorite vodka. It’s fairly inexpensive and very smooth.

6. Zone Perfect Perfectly Simple nutrition bars. Peanut Crunch BarToasted Coconut BarCranberry Almond Bar

I was recently sent some samples of these bars and am so grateful! Upon opening the wrapper of the first bar I tried, I thought they looked just like Larabars. They’re SO much better. They’re quite dense, but more nutty and flavorful, with a short list of ingredients.  My favorite was the Cranberry Almond.

7. Buddy Fruits.image

Ok, ok. this is definitely glorified fruit puree, but I can be a sucker for cute branding/packaging. I’m every marketer’s dream come true. But hey, moms! Don’t you think your kiddos would much rather get their fruit and vegetable requirements through these? Adorbs.

For the record, the only reason I tried these was because you can get the applesauce packets in the kids meals at Chick-fil-A. True story.

8. Jazz Apples.

These aren’t a new find, but more of a re-discovery thanks to Boding. We found these at Target of all places. They’re the best apples! Gotta love one of God’s most precious gifts to us – fresh fruit!

What new food products have you recently discovered?

Tell me your favorite a)packaged good and b)fresh fruit or vegetable.

Pure Barre & Pure Food

Last Thursday, I went to happy hour with my friend Sarah. The HH was hosted by Andrea, one of the teachers from Pure Barre. For each drink purchased, you were entered in a giveaway to win prizes from the studio. I was lucky enough to win four free classes! (source)

Bright and early on Sunday morning (okay, 9 a.m.), I went to my first free class. This was actually my third time at Pure Barre. (Read about my first experience here.) I wish I could take each and every one of my readers to the studio. The workout is incredible! It’s one of those classes that makes me wake up the next morning saying, “I have muscles there? Ouch.” And I love it! Check out the Pure Barre site to find a location near you!

At the Mt. Pleasant location, the new client special is $99 for a month of unlimited classes. On Sunday, their facebook page announced a deal I could not pass up.

image

You see that word challenge? GETS ME EVERY TIME. How could I say no to that? Twenty classes in 30 days…I’ve got this, right? I am both scared and excited to see what happens to my bum. Excuse me,  my seat ;)

Speaking of all things pure in Mt. Pleasant, let’s talk about The Sprout, an organic café and juice bar. My friend Nicole and I popped in for brunch over the weekend. The first thing I noticed were all the juices. My eyes immediately darted to The Refresher: beet, apple, celery, cucumber, and carrot.

IMAG2079

Sold. It was pink! #beetsmakeeverythingpinkIMAG2080

We also split the Black Bean Burrito: black beans, lentils, tomatoes, greens, dairy-free cheese, and tahini dressing. The juice was great and the wrap was also tasty, but the service was beyond slow. It took over 20 minutes to get our food. Our raw food. Um, what?IMAG2081

Nicole also snuck in an order of two wheatgrass shots. She threw hers back like it was water. I, on the other hand, took one sip, gagged as quietly as I possibly could, and passed mine over to her. Could not handle it. They were a pretty green though, I’ll give her that.

Have you ever taken a class at Pure Barre? Do you think I can handle 20 classes in 29 more days?

What’s a health trend you can’t get on board with?
