Sweet Potato & Lentil Soup, NYE Dresses

First, the fun stuff: fashion! The other day, I snagged these Steve Madden glitter heels:
And now I have to decide between two dresses to wear them with on NYE.

Now, onto the serious stuff. I made a new soup!

Spicy Sweet Potato & Lentil Soup


Ingredients:
  • 1 tbsp. olive oil
  • 1 onion, chopped
  • 2 garlic cloves, minced
  • 2 celery ribs, cut into 1/4-inch slices
  • 2 large carrots, cut into 1/4-inch slices
  • 1 medium sweet potato, peeled and cubed
  • 1 cup lentils (I used 1/2 cup red, 1/2 cup green)
  • 6 cups broth
  • 1/2 tsp. ground cumin
  • 1/4 tsp. cayenne
  • s&p
  1. In a large saucepan, heat the olive oil over medium-high heat. Add the onion and garlic and cook for about 2 minutes.
  2. Add the celery and carrot and cook for 5 minutes.
  3. Add sweet potato, lentils, stock, cumin, and cayenne.
  4. Bring to a boil. Cover and simmer until vegetables are tender, about 40 minutes.
As long as you use vegetable broth, this is another vegetarian recipe. With all the vegetables it is a very filling and comforting soup. Add the cayenne carefully – 1/4 tsp. is plenty.
