ZAC EFRON IS SINGLE / Vegetarian Dinner #1

Deep breaths.
Zac Efron and hooker Vanessa Hudgens have broken up. I don’t know why and honestly don’t care to read any gossip sites to find out. All that matters is that he is single and Margaret is going to seriously have to strap me down so that I don’t randomly fly out to Cali one tipsy night. In case you are a new reader, I have expressed my love for Zachy poo here and here. Let’s not forget the ridiculous faceinhole photos either.Man, my hair was voluminous last Summer!

In real life news, I have a confession. I will not be completing one of my December goals. Going vegetarian for a week just isn’t going to fly this month. With the Holidays, family in town, and dates, it’s only going to cramp my style. And my style is chicken.

With that said, I would like to try several vegetarian recipes so that when I do complete this goal, I don’t have an overwhelming “omg, what the truck am I going to eat” feeling for seven days. I will instead have a handful of recipes/not die. My roommate thinks the aforementioned reasons are merely “excuses” but I’m just not mentally prepared to give up Chick-fil-a for a week either.

Vegetarian Recipe #1 – Black Bean and Corn Quesadilla

  • black beans
  • corn
  • your favorite cheese
  • some greens
  • some seasoning (I used Goya Sazon with coriander & annatto)
  • whole wheat tortilla
  • some salsa
Do you like how vague that recipe is? Because who really needs a recipe for a quesadilla? You fill it…DSC_1543 (1280x1045)…fold it, and put that baby in a hot pan.  Let it get crispy and melty and top it with some salsa. It’s like 1-2-3 you’re Mexican. Ole!DSC_1547 (1280x853)
Want to know what else is meat-free and delicious? MENCHIE’S! Seriously, I cannot stop. Amanda and I talk about Menchie’s more than clothes and boys. Last night while Callie was here, I insisted that we go to try two of their new flavors: Peppermint and Cake batter.DSC_1524 (1280x1130)Per usual, I topped it with an unnecessary amount of Oreo crumbles, heath bar bits, cookie dough balls, and sprinkles. My froyo to candy ratio is typically 50:50. What’s your froyo ratio?
