Weekend Recap

Friday afternoon: Boding and I were gchatting about my new phone (he also has an android phone) and he asked about my weekend plans.

Boding: What are you up to tonight/weekend? I want to nerd out with you.
Me: omg i know.
Boding: Technology is fun!!!!
Me: it really is.


So basically we’re huge nerds. After work, I picked up my 14-year-old brother so he could could spend the night/hang out with Boding and me. Boding met us at Pearle Vision so I could finally pick out a pair of glasses using the Charleston Savvy Shopper Deal I bought last week. I spent about 5 minutes choosing between a ton of glasses – I honestly have never made a decision so fast in my life. I narrowed it down to two pairs, then made Boding, my brother, and the girl helping me give me their opinions. In the end, I went with the DKNY tortoise shell pair that I blogged about last week.

I think they are so much cuter on in real life than in that webcam photo I took, so I’ll be sure to take another picture for y’all.

After the glasses purchase, the three of us went home to hang out. I got a text from Jonathan, the chef of Mustard Seed saying, “I made you sushi and fried pickles because you made me feel bad for not being here yesterday. You can come pick it up if you’re hungry.” What, what!! I was so excited even though I really did not mean to make him feel bad. I went to Mustard Seed later that night and Jonathan gave me a huge plate of sushi:
 

He also sent me home with fried pickle spears with a saffron aioli!


Saturday: Jake and I hung out by the pool all day and made a stop by the library for this book:
I started it while at the pool and it is so good. I’m excited the movie is coming out soon! Has anyone read this yet?

I dropped Jake off that afternoon and then headed over to the house where Mariah was housesitting. I brought over the sushi and frickles for our dinner. The frickles were awesome. It was the first time I had tried fried spears. Jonathan used cornmeal and panko crumbs so they were extra crunchy! Now y’all know why I love Mustard Seed so much – Jonathan is thoughtful and creative.


We made ourselves some big girl drinks (sweet tea vodka + water) and sat on the porch with this wonderful view:
 

We also found a really interesting contraption in the living room. Anyone know what this thing might be used for?

Sunday: I went to church today! I hadn’t been in almost a year, and it was so nice to be back. I went to a contemporary service at East Cooper Baptist which was completely different than the traditional services I went to growing up. The music was so lively – I caught myself tapping my feet as I was singing.

After church, an old friend and I had brunch at Red Drum. I ordered the Huevos Rancheros – two fried eggs, ranchero sauce, cotija cheese, and refried beans over corn tortillas. Delish.

I spent the rest of the day at the pool. It had to be about 95* today. Scorcher!

Peanut Butter Banana Bread / Photo Day #9

Photo Day #9 - A picture of the person who has gotten you through the most. Auntie Kelly! There was no question as to whom I would choose for this photo day. More like a mother than an aunt, Kelly has been there for it all. I cannot express how grateful I am for her, especially over the past few years. It’s kind of funny that we’re holding bananas in that picture, because I made peanut butter banana bread tonight. Actually, I made the batter, ate 1/8th of it raw, then baked the rest. My stomach hurts but I’m going to blame the veggie overdose at dinner.

Peanut Butter Banana Bread

Ingredients:

  • 1 1/2  cups mashed banana
  • 1/2  cup  plain fat-free Greek yogurt
  • 1/3  cup  creamy peanut butter
  • 1 tbsp. canola oil 
  • 2  large eggs
  • 1/4  cup  granulated sugar
  • 1/4  cup  packed brown sugar
  • 1 1/2 cups all-purpose flour
  • 1/4  cup  ground flaxseed
  • 3/4  tsp. baking soda
  • 3/4 tsp. cinnamon
  • 1/2  teaspoon  salt

Preparation:

  1. Preheat oven to 350*.
  2. Combine first 5 ingredients in a large bowl and beat with a mixer at medium speed. Add both sugars and beat until combined.
  3. In a separate bowl, combine flour and remaining ingredients. Add flour mixture to banana mixture and beat just until blended. Pour batter into a loaf pan coated with cooking spray. Bake at 350° for 1 hour until a wooden pick inserted in center comes out clean. Remove from oven and cool 10 minutes in pan. Remove bread from pan; cool.

I wouldn’t describe myself as an impatient person, but when baking, all patience flies out the window. I just get restless waiting to see if I’ve created a masterpiece or a x-tastrophe. (Xtina + catastrophe, yeah, go with it.)

I cleaned for 12 minutes. Boring.

I whitened my teeth.

I realized that it was stupid to whiten my teeth right before eating.

I stalked people on facebook.

I banged my knee into the coffee table so hard that I heard it before I felt it. How is that possible?

I have 21 minutes left.

Now I’m gchatting with Tyler.

I just peeked into the oven (without opening the door!) and realized that my bread is rather large. It’s starting to look like a creature.

14 minutes left.

Three people today told me they liked my top. I was wearing it as a dress. Shit.

Has anyone seen Proactiv in vending machines? Because I did today. What’s next, MEN in vending machines? I’ll bang up against that so I can get an extra.

WHERE IS MY HEAD!?

The bread is done.

Why I Have Issues, Round 1

Trust me when I say that there will be a round 2. And maybe a 3 and 4. I am a strange chick.

1. I get an obscene amount of magazines each month. In just one day, I received four.health magazine (2)What’s worse, when I stopped at Publix for just flour, I picked up another because I couldn’t resist the cover. bon appetit magazine (1)

2. I get wayyyyyyy too excited about new food finds. I nearly peed my pants (dress?) when I saw the four new Fage Greek yogurt flavors. If you look really closely, you can see my tongue sticking through my teeth. I am that excited.

3. Every single time I bake, I have some sort of a fail. A burn. A cut. A slice. I dropped this. I splattered that. I broke a utensil. It’s always a surprise. On Friday, I baked these swirled blondies for Amanda’s birthday. blondies In an attempt to easily cut the bars, I thought flipping them out of the pan seemed like a good idea. Okay, NO. I dropped a chunk of them on the floor. fs

4. I spend too much time at Chick-fil-A. Not that there can be such a thing…but…I went there twice today. It wasn’t my first time doing a double-drop-in either. They know me by name, they slap me five…do they worship me? I got this facebook comment from Caroline today: toomuchchickfila

OF COURSE it was me!

5. I cannot do anything without making a mess. While looking for my passport, I destroyed my bedside table drawers. Hurricane Xtina at her best. hurricane xtina

6. I actually cannot dress myself. I don’t know how to match articles of clothing to make an outfit. I seek out fashion advice from my awesome blogger friend, Holly. She was so kind and made me a collage of ideas on how to wear my peach sequin skirt. I love her for this!

7. My nicknames include Hot Mess and Messtina, No explanation necessary.
